Assuming you are talking about seller fulfilled orders, not FBA...
For existing orders you cannot change anything.
For future orders, look to your shipping templates.
If you are shipping from outside the U.S. you may not be able to change it by much, or at all. You will have to choose from the drop down choices, you cannot enter a value of your own.

You can update your delivery window information in the tracking details step up to the start of the window. However, like @Seller_Hi7wbO2Kbo6bl mentioned in their reply, you will not be able to make any changes to the delivery window on existing orders.
