Despite referring to the documentation, I have not found any suitable fields such as EarliestShipDate or LatestShipDate that provide the desired information regarding the complete fulfillment date of an order.

I have only introductory level experience with SP-API, but based on my research the fields you mentioned may not be available. There's an older thread documenting using ShipmentName to get the Shipment Createddate, but does that meet the criteria you're looking for?
